I was looking for something super easy (and super festive) to make for a Memorial Day BBQ at my mom’s house on the East End of Long Island this weekend. Of course, I had Harper (and fun!) in mind, so I pounced on this uber-patriotic ice cream sandwich. (Save this one for July 4th too.)
Here’s the best part: You can make these little beauties in less time than it takes to unwrap an ice cream sandwich from its wrapper. Seriously. The super creative mom behind Living Locurto says she has trouble serving her kids something from a box. So she got a little creative with standard fare ice cream sandwiches.
She covered the edges with red, white and blue sprinkles. Then she inserted popsicle sticks into them, so they’d be easy for little hands to hold, and voila!
Your Memorial Day sweet treat, my friends. This one is a keeper.
