Watermelon and Feta End of Summer Salad

An easy-to-make addition to your Labor Day BBQ.

I’ve noticed this sweet/salty watermelon and feta salad on the menus of gourmet cafes all over this summer. Then I saw a few recipes for it online, and it turns out that this summery salad is so easy to make. It’s the perfect day-of addition to a Labor Day BBQ. I’m making it today for a family party at my mom’s house.

The directions for this recipe are about as simple as you can get. This version comes from Alice Currah’s new cookbook “Savory Sweet Life: 100 Recipes for Every Family Occasion.

Ingredients
6 cups cubed watermelon
1 cup crumpled feta cheese
1/4 cup thinly sliced red onion
1/4 cup chopped fresh mint
1/4 fresh lime juice
1 tbsp extra-virgin olive oil

Directions

1. Combine watermelon, feta cheese, red onion and mint in a large bowl.

2. Pour the lime juice and olive oil over the watermelon mixture and toss gently to coat.

Serve!

The Barefoot Contessa likes to add arugula to her watermelon and feta salad. A blogger named Two Peas and Their Pod adds mint, red onion and balsamic vinegar to her version.

I have to say that it’s good pure and simple too, with nothing but juicy watermelon to offset the creamy salty feta. No oil, salt or extra ingredients necessary.
